Nero Di Troia
The Nero di Troia grape is a native of the Puglia Region in south eastern Italy. The vineyard is in the Gargano, the ‘spur’ of Italy and works to EU certified biological standards. The winery was rebuilt in 2012 and works to very tightly controlled standards. For the pre fermentation maceration, the juice is left in contact with the skins for up to 12 days and is then fermented in stainless steel containers. Ageing takes place for 6 months in stainless steel and is then bottled. The result is a warm and powerful, dry, ruby red wine. The tannins and acidity are both noticeable but are well controlled in the balanced structure. There is a beautiful nose of red-fleshed fruit and dried fruits such as blackberries and currants, with hints of spiciness and floral notes such as violets showing through.
The wine is strong enough to match spicy dishes as well strong meats and matured cheeses.
