La Bolla Classic Method 2008

La Bolla Classic is a true classic sparkling wine created in the Roero area near the Barolo production zone in the Piedmont Region of North West Italy. It is a produced using the ‘Classic’ or ‘Traditional Method’ (the same as for Champagne) and is a cuvee of 50% Chardonnay, 25% Arneis and 25% Favorita grapes.

Grapes were harvested in 2008 and after its second fermentation in the bottle, the wine was left on the lees for 18 months. The resultant wine has a pale yellow colour hue and the constant perlage (mousse) makes it very pleasing and full in the mouth. It is an excellent example of a rich, fresh and harmonious sparkling wine with secondary yeasty aromas of biscuit and brioche.

It is well suited for an aperitif or to accompany a fish or white meat course.
